Ava is a Toscana Rosso IGT of great structure and complexity, born from a blend of Cabernet Franc, Cabernet Sauvignon, Merlot, Syrah, and Alicante. It is crafted to express power and depth without sacrificing elegance, appealing to an experienced and curious audience. Its identity is that of an important red wine, capable of conveying concentration, balance, and character in every sip.
Fermentation takes place with an extremely long maceration on the skins, essential for extracting structure and complexity. The wine then ages in barriques for 20 months, with 25% new oak. This step creates a refined balance between the strength of the fruit and the finesse of the wood. Alcohol is perfectly integrated, supported by lively freshness and acidity that sustain the drinkability.
On the nose it opens with an explosion of ripe dark fruit: blackberry, blueberry, and plum dominate the bouquet. Elegant notes of sweet spices complete the aromatic profile, adding depth and complexity without overpowering the fruit core.
The palate is full, dense, and enveloping. Tannins are well integrated, contributing to a solid yet balanced structure. A pronounced savory edge triggers persistent salivation, stimulating the palate and preparing it for the next sip, making the tasting long and satisfying.
Ideal for special occasions and contemplative moments. Perfect with 90-month aged Parmigiano, hay-aged pecorino, and for the more adventurous, dark chocolate. A deep, authoritative red, able to deliver great intensity to those who know how to listen.
